Enver Can Gumus - Executive Chef

Born along Turkey’s Mediterranean coast, Chef Can brings a globally influenced, produce-driven approach to modern cuisine at SKAI Restaurant and Bar. His culinary journey has taken him across Europe, the Middle East and Asia, shaping a style defined by precision, curiosity and a deep respect for ingredients.

Prior to joining SKAI, Chef Can led culinary teams across China, Mauritius and the Maldives, experiences that deepened his appreciation for Asian flavours and shaped his modern, cross-cultural cooking style, even leading to a Guest Chef appearance on MasterChef Turkey in 2023.

Now as Executive Chef of SKAI on Level 70, he leads the restaurant’s culinary vision, bringing clarity, refinement and bold flavours to the dining experience.

ICONIC CITY VIEW

SKAI is a refined yet lively contemporary grill restaurant, situated on the 70th floor of Singapore’s acclaimed Swissôtel The Stamford. The scenic view of the Singapore skyline in the background makes SKAI a perfect place to celebrate special events and create memories.

ARTISANAL BEEF CUTS

With SKAI’s extensive expertise in butchery, sourcing and curing premium quality beef, cooked to perfection in SKAI’s state-of-the-art Josper Charcoal Oven or over Binchotan – a prized white charcoal traditionally used in Japanese cooking; a must-try in the menu is the Saga Wagyu A5. Sharing cuts are also available such as the Westholme Wagyu Prime Rib served bone-in.

EXQUISITE DESSERTS

Equally impressive is the array of mouth-watering desserts and photogenic pastry spread, all artistic creations are created by Executive Pastry Chef Yong Ming Choong and his pastry team. A must-try is the Araguani Chocolate.

PRODUCE-DRIVEN MENU

SKAI features the finest produce with a respectful tribute towards Japanese ingredients; the lunch set menu comprises grains and salads, main courses and delicious desserts, while the dinner menu brings a more refined selection of sharing plates.

TUNA BAR

Within SKAI Restaurant is the Tuna Bar, offering the finest cuts of tuna, meticulously sourced from premium fisheries and expertly prepared. Whether served as sashimi, tataki, or a specialty dish, each creation highlights the delicate flavours and textures of this exceptional seafood.
